Delicious and Quick Christmas Cake (plus muffins!!!)

Ingredients:

Method:

  • Preheat oven to 180C. Line a 20cm square cake tin with 2 layers of Glad Bake (or other non-stick baking paper) so that the paper sits a couple of cm above the top of the tin.
  • Line 8 muffin cups with cases (you will have too much mix for 1 cake).
  • Mix the mixed dried fruit/nuts in a large bowl with oil, spices and water.
  • Add the Naturally Nice Muffin & Cookie mix and stir well. Transfer ¼ cupfulls of mix into the 8 muffin cases and bake for 22 minutes.
  • Leave the remaining mix to sit while the muffins are cooking.
  • Stir the cake mix again thoroughly and spoon it into the cake tin
  • Bake the cake for 1 hour and let cool in the tin before storing in an airtight container
