CHOCOLATE & STRAWBERRY MUFFIN (with Biomed Muffin & Cookie Mix Chocolate)
Chocolate and Strawberry Muffin
- 1 packet Biomed Muffin & Cookie Mix – Chocolate (700g)
- 6-7 strawberries
- 6-7 Enjoy Life Allergy Free Chocolate Mega Chunks
- Jam (I used Strawberry Jam)
- Desiccated coconut
Bake the chocolate muffins according to the instructions on the Biomed Muffin & Cookie Mix – Chocolate (700g) packet:
Preheat oven to 180 °.
In a large bowl, empty the chocolate muffin package, add ½ cup (125ml) of oil and 2 cups (500ml) of water, add 1 egg (optional) and mix well. Pour the batter in each cup of a muffin pan (yields 12 – 14 muffins).
Cut the strawberries in half and insert half a strawberry and 1 Allergy Free Chocolate Mega Chunk inside the batter of each muffin. Make sure the batter covers the strawberries and the mega chunks.
Bake for 22 minutes or until the top of the muffins are firm but moist to touch.
Wait for the muffins to cool down. Brush the muffins with jam (I used a silicone pastry brush) and dip each muffin in desiccated coconut. Enjoy!
