Biomed Chewy Caramel Muesli Bars (cane-sugar free version)
Biomed Café Chewy Caramel Muesli Bars (cane-sugar free version)
100g Aclara coconut sugar,
100g Australian honey
2 cups rice puffs (or puffed amaranths, pecans and sesame seeds)
Line a plastic storage container or square cake tin with non-stick baking paper.
In a saucepan, add the Aclara coconut sugar, Australian honey (you could use golden or rice syrup), oil (I used rice bran oil but any oil would do) and Biomed Protein Rich Chickpea Flour. Mix well.
Put the saucepan over medium heat and cook, stirring until the mix begins to bubble. Stir while bubbling for around 2 or 3 minutes until all of the sugar has dissolved and the mix seems smooth while stirring.
Mix in 2 cups of anything… In this recipe I used Rice Puffs today - in the past I have used mixtures of puffed amaranth, pecans and sesame seeds (2 cups of anything dry and edible will do the trick…)
Push the mix into the prepared tin and leave to cool.
As the mix cools, it will firm up and can be cut into bars or squares with a sharp knife
P.S. You could substitute coconut sugar for caster sugar (higher GI though…)
