Sticky Chocolate or Carob Fudge (no added sugar)
Ingredients:
1 cup Brazil Nuts (other nuts can be substituted)
1/2 cup prunes
1/2 cup raisins
1/2 cup dates
• 1/4 cup boiling water
1 cup Cocoa Powder or Carob Powder
• 1/4 cup ground flax seeds
Servings: 4
Preparation Instructions:
1. Rehydrate the prunes, dates and raisins by soaking them in the boiling water for 10 minutes.
2. Drain excess water off dried fruit and blend all ingredients, except linseed meal in a blender or food processor until smooth
3. Add the flax seeds and process again until the seeds disappear into the mix.
4. Line a square baking tray with plastic wrap and smooth the mix evenly. Freeze for 2 hours.
5. Cut into pieces and freeze again before serving. Enjoy!
