Amaranth is a highly nutritious ancient plant - it was a staple in the diet of the Aztecs who believed it had special powers. The leaves and seeds can be eaten and both are delicious! The Mexicans are known for their puffed amaranth, the Peruvians use amaranth seeds to make beer. The seeds can be used to make porridge can be added to soup, can be sprouted or ground into flour. Amaranth is not a true grain and is therefore suitable for those with grain allergies. Amaranth seed is high in protein (15-18%) and contains significant amounts of lysine and methionine, which are the two essential amino acids you don't find in grains. Amaranth is high in fibre, easy to digest and contains a heap of calcium, iron, potassium and vitamins. Our puffed amaranth is certified to be free from gluten, dairy, soy, egg and yeast

Olive Green Organic Amaranth is grown using ethical farming practices in Bolivia. Amaranth products have a high glycaemic index so should be mixed with protein or lower glycaemic index foods if you have diabetes or hypoglycaemia. Puffed amaranth is great as a cereal, in muesli mixes, in cookies and muesli slices and can be added to bread crumbing mixes to make them more nutritious.
