When the coconut tree is tapped, it produces a naturally sweet, nutrient-rich “sap” that exudes from the coconut blossoms. This sap is very low glycemic and contains 17 amino acids, minerals, vitamin C, broad-spectrum B vitamins, and has a nearly neutral pH.
This natural sap is minimally evaporated at low temperatures (only to remove excess moisture and allow sap to thicken), never exceeding an average summer day in the tropics.
Sap nectar is around 0.5% glucose, 1.5% fructose, 16% sucrose, and 82% inulin. Nectar has an average GI of 35 (considered to be low)
This product is naturally sweet an be used as a substitute for Agave/ maple syrup for sweetening or could be used like jam/ honey.
