Princess Fiona's muffin & cookie mixes are specifically formulated to be suitable for those with food allergy, blood sugar problems and chemical sensitivity issues but are delicious enough for everyone to enjoy. Muffin & Cookie mixes contain more protein and fibre and less refined carbohydrates than most gluten-free snack alternatives making them a great choice for every day eating.

Princess Fiona's Magic Bean Flour
The worlds most nutritious and versatile flour! Magic Bean Flour is made by grinding chickpeas which have been dehulled and precooked to deactivate aggravating chemicals present in many pulses. Magic Bean Flour has a smooth, creamy nutty taste, is exceptionally high in protein (over 27%), a good source of folic acid, iron, calcium and other nutrients, and a good source of fibre to encourage "good" gut bugs. Cooked chickpeas have a glycaemic index of around 40 making this product blood sugar friendly. The flour can be used alone or mixed with other flours in baking breads, muffins, cookies, cakes and crackers. It can be made into a delicious milk alternative, lovely custard, dairy free ice-cream, spreads, dips and sauces. Mixed with seeds, such as sunflower, sesame or pumpkin seeds it provides "complete protein" and a rich source of all essential amino acids.

CMC gum -250g
Use 1 teaspoon per 150g of gluten-free flour
CMC is a vegetable derived gum used as a gluten substitute in gluten-free baking. Gluten in wheat flour provides elasticity and holds baked goods together when they are cooked. If a vegetable gum, such as CMC or guar gum, is not added to gluten-free flours you will find your bread, muffins and cakes will fall apart like sandcastles.
CMC and guar gum have different properties - CMC is ideal when you want to make something with a more "elastic" type property - such as pastry, pizza bases, pasta and bread.
CMC also acts like an emulsifier - helping to mix oil and water - and can also be used to thicken salad dressings

GDL -250g
Use 1 teaspoon with 1/2 teaspoon of sodium bicarbonate per cup (140g) of flour to make it "self raising". 1 teaspoon of GDL + 1/2 teaspoon of sodium bicarbonate is equivalent to 2 teaspoons of baking powder.
Glucono delta lactone is a plant derived raising agent with similar properties to cream of tartar. Mixed with sodium bicarbonate (baking soda) it will form air bubbles and will "raise" muffins, breads and cookies. GDL has many benefits over cream of tartar - it is not a product of yeast fermentation making it more suitable for those allergic to yeast or prone to yeast infections (Candida). GDL requires a temperature of 55C before it forms bubbles with sodium bicarbonate - this means you can mix your dough or batter well without it losing activity. GDL is particularly good in bread and things that need to be mixed thoroughly. Ingredients: Glucono delta lactone
